Strawberry Rechel is an Armenian food recipe for strawberry preserves.
- 2 quarts strawberries
- 6 cups sugar
- 2 tbsp lemon juice
- Stem and wash strawberries carefully. Scald them in boiling water for 2 minutes, then drain.
- Add 4 cups of sugar and boil 2 minutes until it starts bubbling. Remove from fire and when bubbling has stopped add 2 more cups of sugar and boil 5 minutes more.
- Then add 2 tablespoons of lemon juice, pour into a shallow pan and let stand overnight.
- Put into jars the next day.
